Below is an estimate of what you might expect to receive when you pick up your order at Homestead Butchering.
Scroll to the bottom of the page to proceed with your cut sheet submission.

Please understand that individual Farmers and the  animals they raise vary GREATLY, and this is only a representation of averages.


Example: Beef hanging weights of 400 lb to 1200 lb are not uncommon.
This 300% variation is difficult to represent on a list.
Please contact the person from whom you purchased the animal if you have questions about the hanging weight and yield.

This list assumes 1" thick steaks, and 3 lb Roasts.

  • 6 Ribeye Steaks (Delmonicos) or 2 Prime Rib Roasts

  • 4 T-bone & 2 Porterhouse Steaks or 6 NY Strips & 4-6 Filet Mignon

  • 3 Sirloin Steaks

  • 1 Flat Iron Steak

  • 2 Chuck Roasts

  • 1 each: Bottom Round Roast, Top Round Roast (London Broil), Sirloin Tip Roast

  • 1/2 of a Brisket

  • 1-2 Short Ribs

  • Flank or Skirt Steak

  • 40-60 Lbs of Ground Beef: May be packaged in 1 lb or 2 lb Bags.

  • ​If you want to reduce the amount of ground beef, you may select items such as Burger Patties, Hot Dogs, Snack Sticks, or Sweet Bologna.​​

  • You may also select extras such as: Jerky, Stew Cubes, Chipped Beef, Soup Bones, & Marrow Bones

This list assumes 3/4" thick Pork Chops, and 3 lb Roasts.

Variation will occur due to differences in individual animals

  • Bacon: 10 lbs of Nitrite-Free Bacon, Smoked with local Wild Cherry Wood.

  • Loin: 12 Pork Chops and/or 2 loin roasts and/or 8 lbs of Canadian Bacon (choice)

  • Pork Butt: 4 Boston Butt Roasts (2-3 lbs each)

  • Picnic: 2 Arm Roasts (2-3 lbs each, also known as Pork Picnic)

  • 1 Tenderloin (about 1 lb)

  • Ribs: 1 Rack Spare Ribs & 1 Rack Baby Back Ribs (about 1.5 lbs each)

  • Ham: 3 Boneless Hams (4 lbs each), or 1 Bone-in Hams (may be cut into 1" Ham Steaks), or 9 lbs of Chipped Ham (Fully Cooked Lunch Meat), or a combination.

  • 20-25 lbs of Trim Meat: Pick one item from of the following: many flavors of Rope Sausage, Breakfast Sausage, Loose Sausage (no casing), & Smoked Sausage, as well as Hamloaf or Pork Roll (A PA Dutch Favorite)

  • Lard (optional): 3-4 Quart Containers of Rendered Pork Lard. Excellent for Baking/Frying.
